Penelope Anne “Penny” Elkington was born to Aubrey and Aileen Elkington at Eitel Hospital in Minneapolis. She completed her early schooling in Montevideo graduating with the Class of 1962. Following graduation, Penny received her degree in medical technology. In 1995, after many years of working and teaching as a Veterinary Technician in Minnesota and Florida, Penny left her job, sold her home in Minneapolis and returned to Montevideo where she lived in the family home to be with her aging parents. It was there that she taught herself to knit, can fruits and vegetables, and make pickles.
In 2001, Penny was diagnosed with head and neck cancer. When cancer returned for the fourth time in 2013, Penny decided she did not want to receive anymore treatment. She felt she had watched enough baseball, football, and hockey games, listened to enough music, mowed enough grass, let enough cats in and out of the house every day, knitted enough baby sweaters and cooked, baked and canned enough. She died on Monday, May 19, 2014 at the age of 70.
Penny is survived by her siblings and their families: Pat Larson of Coon Rapids; Bob (Colleen) Elkington of Park Rapids; Kathy (Jack) Hendrickson of Montevideo; Reenie Elkington of Alexandria; Bo (Scott) Spletter of Wadena; Tim (Shelly) Elkington of Montevideo; nieces and nephews: Steve (Nancy) Larson, Kim (Clay) Baxter; Mike (Jami) Elkington; Jenn (Chris) Magnussen; Jessi (Cody) Eischens; Dustan (Lauree) Spletter; Samantha Spletter; Casey Schulte; Zach Schulte; great nieces and nephews: Zachary, Brooke, Kyra, Ellie, Trey, McKayla, and Kortlyn; ASF sister: Juana Quintana; uncle Lenard Cooley and aunts: Tootie Herman and Dorothy Elkington; and many long time and new friends, loyal and fun friends, and caring and generous friends as well as her three cats: Dottie, Maddie, and Jasmine.
She was preceded in death by her parents: Aubrey and Aileen, three brothers-in-law: Jack Pehrson, Delane Larson, and Hank Christenson.
Penny donated her body to the Mayo Medical School in Rochester, Minnesota.
She was life long active member of St. Joseph Church in Montevideo.
