Caroline Dorothea Hiepler was born on July 3, 1931 near Winship, South Dakota to Adolph Godfried and Margaret Caroline Hiepler. She was baptized at Zion Lutheran Church at Ellendale, ND. Caroline started school in Frederick, SD and then moved with the Hiepler family to Columbia, SD in 1944. She was confirmed at St. John’s Lutheran Church in Columbia, SD .
On October 23, 1953 she was united in marriage to Ervin Fokken at the St. John’s Lutheran Church in Columbia, SD. They resided in Willmar, MN until 1961, at which time they moved to Maynard, MN . She owned and operated Carol’s Cafe in Maynard for several years, was employed by Budger’s Dinner House and Plews Manufacturing in Granite Falls, MN. She was a faithful member of the Maynard Lutheran Church. She was a member of the Kitchen Queen Homemakers club and the Thursday Morning Coffee club.
She enjoyed spending time with her family and friends during the summer at Happy’s Landing Resort, near Alexandria, MN and the winter season at her home in Apache Junction, AZ.
On January 13, 2007 she was united with a spiritual blessing to Warren Carrington. They continued to enjoy their home in AZ where she was known as the “pie lady” until January, 2012 when she became a resident of the Augustana Health Care Center in Apple Valley, Mn until the time of her death.
She fought a courageous battle with cancer until she died peacefully on December 9, 2014 while under hospice care.
She is survived by her sons: Mark (Lois) Fokken of Lakeville, MN, and Kim Fokken of Eagan, MN; grandchildren: Adam (Shannon) Fokken, Kyle Fokken and Troy Fokken all of Eagan, MN and great-grandchildren, Adelyn and Connor Fokken of Eagan,MN and sister-in-law Alyce Arends of Clara City, MN
She was preceded in death by her parents; husbands, Ervin Fokken and Warren Carrington; and her brothers, Raymond, Melvin and James Hiepler.
